Roasted Red Pepper and Feta Pasta
Roasted red peppers and feta are combined to make a delicious and easy pasta sauce for any quick weeknight meal.
Servings: 6 servings
- 2 tbsp Olive oil
- 1/2 Medium Onion
- 2 Cloves Garlic
- 1/4 Cup White wine
- 1/3 Cup Chicken stock
- 1/2 Cup Feta cheese
- 1 Jar Roasted red peppers
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 12 Oz Dry pasta
Start boiling water for the pasta.
While water is boiling, saute onions and olive oil together until soft.
Add garlic and chopped roasted red peppers. Cook until warm.
Add wine and cook until reduced.
Transfer mixture to a blender and add chicken stock and feta cheese.
Blend until smooth.
Add pasta to boiling water. Once cooked, drain and return back to pot.
Add sauce to pasta and serve!
