Roasted Red Pepper and Feta Pasta

Roasted red peppers and feta are combined to make a delicious and easy pasta sauce for any quick weeknight meal.

  • 2 tbsp Olive oil
  • 1/2 Medium Onion
  • 2 Cloves Garlic
  • 1/4 Cup White wine
  • 1/3 Cup Chicken stock
  • 1/2 Cup Feta cheese
  • 1 Jar Roasted red peppers
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 12 Oz Dry pasta


  • Start boiling water for the pasta.
  • While water is boiling, saute onions and olive oil together until soft.
  • Add garlic and chopped roasted red peppers. Cook until warm.
  • Add wine and cook until reduced.
  • Transfer mixture to a blender and add chicken stock and feta cheese.
  • Blend until smooth.
  • Add pasta to boiling water. Once cooked, drain and return back to pot.
  • Add sauce to pasta and serve!
